THE FIRST INGREDIENT
The first ingredient in all bakes is butter. The most basic ingredient for all cakes, cookies, pastry dough, etc. In this blog I will be telling you a few types of butters, the optimum temperature, its texture and a lot more. I also have shared a few links of butters which you can get.
CAKE
Cake is something everybody loves. All weddings and birthdays are unimaginable without cake. So the main ingredient going in cake should be absolutely perfect for a luscious cake. This is something I have learnt over the past few years, always use unsalted butter and add a pinch of salt (or as per requirement) unless the recipe you are using asks for salted butter. Now, there is no specific reason for this it just depends on preference but this is what I do because I feel the best bakes are with unsalted butter. Now, the temperature of the butter, always room temperature because if you use frozen butter for cakes there are going to be lumps of butter in the cake and if you use melted butter then you'll end up not building any air while you whip. Make sure you whip butter and sugar very well so that your cake is light and airy.
Just make sure that your butter is not too cold and is smooth and spreadable. Which brand of butter to use, the answer is simple use a good quality unsalted butter with a fat content of around 70%-80%. There is a brand called 'LESCURE' which provide really good quality butter but if you cannot find it where you live just use any good quality butter with a fat content as mentioned above.
COOKIES
Now some people use room temperature butter or frozen butter or melted butter for different kinds of cookies, then when you build a recipe of your own what kind of butter are you going to use, I have an answer for this. If you want a very classic chocolate chip cookie go with room temperature soft butter, if you wish to have some knobbly bits in the cookie which is big and not smooth on top use cold butter and if you want a thinner, goey cookie which spreads easily in the oven use melted butter. You don't have to whip butter while making cookies because a cookie is always melt in the mouth and goey so there is no requirement of air formation.
PASTRY DOUGH
Some people think it's really difficult to incorporate flaky layers of butter into a pastry dough. Making a pastry dough can be really tricky if instructions are not followed. Simply, understand one thing that while making pastry dough you will not be getting time to knead it. Just smush the pieces of frozen butter between your index finger and thumb add frozen water, gather the dough on the surface and let it sit in the fridge for atleast 2 hours or overnight if possible. What happens is when you make a pastry dough and you handle it with your hands the butter in the dough would melt ultimately making the dough sticky. After the dough is in the fridge for sufficient amount of time it has to layered with butter and for that purpose you need to use, again room temperature butter and unsalted if possible because the dough will be containing salt. Then, you again have to let it sit in the fridge for minimum of 30 minutes so that the butter hardens and you can roll out the dough and layer it with butter again. If you make a pastry following these instructions and patiently you will definitely be able to make perfect flaky layers in your pastry.
BUTTERCREAM
Buttercream again an element used in a cake, seems really easy but very important. The butter used for buttercream should be room temperature only for any kind of buttercream be it american, swiss meringue or italian. If you use cold butter it will not whip properly and if you use melted butter the buttercream would be sloppy and you would not be able to ice the cake. Whipping the butter with sugar is a really important step because that will dissolve the sugar into butter and you wouldn't get grainy sugar in your buttercream.
TIP😉: Always use icing sugar for buttercreams because it dissolves easily.
GO VEGAN
A vegan option for butter would be plant based butter or there are many vegan butter options available online.
